Taco Ranch Bites are the ultimate crowd-pleasing appetizer! These savory, cheesy mini bites are loaded with seasoned taco beef, ranch flavor, and melted cheese—all nestled in golden crescent dough cups. Perfect for parties, game nights, or easy snacking, they’re quick to prepare and even quicker to disappear.
2 cans refrigerated crescent roll dough (8 oz each)
Non-stick cooking spray
1 lb ground beef
2 tablespoons taco seasoning
1/3 cup water
1/3 cup ranch dressing
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
2 green onions, thinly sliced (optional for garnish)
Sour cream, for serving (optional)
Preheat Oven:
Preheat your oven to 375°F (190°C) and lightly spray a mini muffin tin with non-stick cooking spray.
Prepare the Dough:
Unroll the crescent dough and separate it into triangles. Cut each triangle in half to make smaller portions. Press each piece into the bottom and up the sides of the muffin cups.
Cook the Beef:
In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add taco seasoning and water, then stir to combine. Simmer for 3–4 minutes until thickened. Remove from heat.
Add Ranch & Cheese:
Stir in ranch dressing and half of the shredded cheese (cheddar and mozzarella) into the taco meat mixture.
Fill the Dough Cups:
Spoon the beef mixture into each prepared dough cup. Top with remaining cheese.
Bake:
Bake in the preheated oven for 12–15 minutes, or until the dough is golden and the cheese is bubbly.
Serve:
Let cool slightly before removing from the muffin tin. Garnish with sliced green onions and a dollop of sour cream if desired. Serve warm!
Make Ahead: You can prep the filling up to a day in advance and refrigerate it. Assemble and bake fresh when needed.
Customize It: Swap ground beef with ground turkey or plant-based crumbles for a lighter or vegetarian version.
Spicy Option: Add chopped jalapeños or a dash of hot sauce to the filling for some heat.
Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer for best results.
