Main Ingredients:
1 ½ lbs ground beef
1 small yellow onion, diced
3 cloves garlic, minced
3 cups baby potatoes, halved or quartered
1 (15 oz) can red kidney beans, drained and rinsed
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained
1 (10.5 oz) can condensed cream of mushroom soup
1 (14.5 oz) can diced tomatoes with juice
1 cup shredded cheddar cheese
½ cup sour cream
1 ½ tsp chili powder
1 tsp paprika
1 tsp ground cumin
½ tsp salt
½ tsp black pepper
Optional: ¼ tsp crushed red pepper flakes (for heat)
¼ cup chopped fresh parsley or green onions (for garnish)
Brown the Ground Beef:
In a large skillet over medium heat, cook the ground beef with diced onions and garlic until beef is browned and onions are soft. Drain excess grease.
Prepare the Slow Cooker:
