1 sheet puff pastry, thawed

1 egg, beaten (for egg wash)

For the Cream Cheese Filling:

4 oz cream cheese, softened

2 tbsp granulated sugar

½ tsp vanilla extract

For the Topping:

⅓ cup raspberry preserves or jam

Powdered sugar (optional, for dusting)

Instructions

Preheat the Oven:
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Prepare the Pastry:
Roll out the thawed puff pastry on a lightly floured surface. Cut into 12 equal squares (or smaller, if preferred).

Make the Filling:
In a small mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth and creamy.

Assemble the Bites:
Place a small dollop (about 1 tsp) of the cream cheese filling in the center of each pastry square. Top with ½ tsp of raspberry preserves.

Seal and Brush:
Fold the corners of each square slightly toward the center, gently pressing to secure (or leave open-faced if preferred). Brush the edges with the beaten egg.

Bake:
Transfer to the prepared baking sheet and bake for 15–18 minutes, or until golden brown and puffed.

Cool and Serve:
Let cool for a few minutes. Dust with powdered sugar if desired and serve warm or at room temperature.

Flavor Variations: Try using strawberry, blueberry, or apricot jam for a fun twist.

Make-Ahead Tip: Assemble the bites and refrigerate (covered) up to 1 day ahead. Bake just before serving.

Optional Glaze: Mix ½ cup powdered sugar with 1 tbsp milk and drizzle over cooled bites for a sweet finish.
