These sweet and savory Honey Bacon Roasted Potatoes are a mouthwatering side dish made with crispy roasted potatoes, smoky bacon, and a sticky honey glaze. Perfect for brunch, dinner, or the holidays, this simple dish packs bold flavor into every golden bite.

For the Roasted Potatoes:

2 lbs baby potatoes (halved or quartered if large)

1 tbsp olive oil

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp smoked paprika (optional)

For the Honey Bacon Glaze:

6 slices bacon, chopped

3 tbsp honey

1 tbsp Dijon mustard

1/2 tsp garlic powder

1 tbsp chopped fresh parsley (optional, for garnish)

Instructions

Preheat Oven:
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

Prep the Potatoes:
In a large bowl, toss the halved potatoes with olive oil, salt, pepper, and smoked paprika (if using). Spread them evenly on the prepared baking sheet.

Roast:
Roast potatoes for 30–35 minutes, flipping halfway through, until golden and crispy on the edges.

Cook the Bacon:
While potatoes roast, cook chopped bacon in a skillet over medium heat until crispy. Remove bacon and drain on a paper towel. Reserve about 1 tablespoon of bacon fat in the skillet.

Make the Glaze:
To the skillet with bacon fat, add honey, Dijon mustard, and garlic powder. Stir over low heat for 1–2 minutes until combined and warmed through.

Combine & Serve:
Once the potatoes are roasted, transfer them to a large bowl. Toss with crispy bacon and the warm honey glaze until evenly coated. Garnish with chopped parsley and serve hot.

Notes

Add spice: A pinch of crushed red pepper flakes adds a nice kick to the glaze.

Make it ahead: Roast the potatoes and cook the bacon in advance. Reheat everything together with the glaze before serving.

Use different potatoes: Yukon golds or fingerlings work great too—just chop into similar-sized pieces.

Air Fryer Tip: Roast potatoes in the air fryer at 400°F for 20–25 minutes, shaking halfway through.
