For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:

24 oz (3 blocks) cream cheese, softened

1 cup granulated sugar

3 large eggs

1 cup heavy cream

1 tbsp vanilla extract

1 tbsp cornstarch

For the Brûlée Topping:

1/4 cup granulated sugar

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a 9-inch springform pan and bake for 8-10 minutes. Let cool.
  4. In a large bowl, beat the cream cheese until smooth.
  5. Add sugar and mix until creamy.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in heavy cream, vanilla extract, and cornstarch until fully combined.
  8. Pour the filling over the crust and smooth the top.
  9. Place the pan in a larger roasting pan and fill with hot water halfway up the sides of the cheesecake pan.
  10. Bake for 50-60 minutes until the center is just set.
  11. Turn off the oven, leave the door slightly open, and let the cheesecake cool inside for 1 hour.
  12. Remove from the oven and refrigerate for at least 4 hours or overnight.
  13. Before serving, sprinkle sugar evenly over the cheesecake and use a kitchen torch to caramelize until golden brown and crisp.
  14. Let sit for a few minutes to allow the sugar to harden, then serve.

Notes

For a deeper vanilla flavor, use vanilla bean paste.

Let the cheesecake chill overnight for the best texture.

If you don’t have a torch, place under a broiler for 1-2 minutes, watching carefully to prevent burning.

Serve with fresh berries or whipped cream for extra indulgence.
