¼ cup full-fat coconut milk
1 large egg

1 tablespoon fish sauce
1 tablespoon lime juice
1 tablespoon fresh cilantro, chopped
1 teaspoon sriracha (optional for heat)

1 cup coconut milk
1 tablespoon red curry paste
1 tablespoon lime juice
1 teaspoon honey or maple syrup

In a large mixing bowl, combine the ground chicken, panko breadcrumbs, coconut milk, egg, garlic, ginger, green onions, soy sauce, fish sauce, lime juice, cilantro, sriracha (if using), and salt and pepper to taste.
